Breakfast or late-night home snacking never tasted so good! Steak & eggs are cooked fajita-style (with bell peppers, onions and pico de gallo), then dropped into a warm flour tortilla spread with a generous slathering of Merkts Sharp Cheddar. Your reward: a taco that's out of this world.

Ingredients

  • 4 Tbsp – Merkts Sharp Cheddar, room temperature
  • 1-2 Tbsp – Vegetable oil
  • 1 lb – Raw skirt steak, cut into thin strips
  • 1/2 of 1 whole – Green bell pepper, cut into thin strips
  • 1/2 of 1 whole – Red bell pepper, cut into thin strips
  • 1/2 of 1 whole – Small red onion, cut into thin strips
  • To taste – Kosher salt & cracked black pepper
  • 4 each – Large eggs, fresh
  • 4 each – Flour tortillas, small (fajita-size)
  • 4 heaping tsp – Pico de gallo (or "salsa fresca"), prepared

Preparation

Heat oil in big nonstick sauté pan on med-high heat. Add steak & peppers/onions. Sauté, stirring often, 2 min or till steak is cooked your way and peppers/onions charred. Put in a bowl; salt & pepper to taste. In same pan, soft-scramble eggs and divide into 4 portions. Microwave the tortillas 10 sec. Set side-by-side on clean work surface, & spread 1 Tbsp Merkts evenly over each tortilla. Spread 4 portions of hot steak/peppers/onions mix evenly on just 1/2 of each tortilla. Top w/eggs; top that with 1 heaping tsp of pico de gallo. Fold tortillas in half, folding each of the plain cheese halves over the steak/peppers/onions/eggs/pico half to make a taco. Done!

Tasty Tips

  • For convenience, you can buy fajita-style beef that's pre-cooked, pre-packaged and sometimes even pre-sliced.
  • Strips of raw flank steak or tri-tip can also be economical cuts of beef. Ask your local butcher for suggestions.
  • Want a change of pace from beef? Substitute another meat like shredded pork, or use grilled or sautéed chicken strips.
