Prime Time Queso

SERVING SIZE: 1 C queso & 4 baked potato skins per person

Man oh man...bring your appetite for this one. Chunks of savory steak, creamy horseradish and Merkts Sharp Cheddar are combined to make one heck of a hearty queso. Serve alongside crispy potato skins for endless dipping. It’s game day magic!

  • 2 tubs – Merkts Sharp Cheddar
  • 1/2 C – Heavy cream
  • 2 Tbsp – Horseradish, prepared
  • 4 C – Prepared, fully cooked steak slices, cut into small chunks
  • 16 each – Frozen potato skins
  • 4 heaping tsp – Scallions (green onions), sliced


Bake the potato skins per the package instructions. Heat Merkts, cream & horseradish on med-high heat in saucepot to melt cheese; whisk together to combine. Turn off heat. Heat the cooked beef chunks (in microwave or nonstick sauté pan), stir into the hot queso & combine evenly. Spoon 1 C portions of queso into 4 bowls. Shake 1 heaping tsp of sliced scallions over each bowl of queso. Line each bowl with 4 of the potato skins. Serve hot and enjoy!

  • It's quick & easy to use a pack of fully cooked steak slices from the supermarket. But if you want a more premium feel, you can cook a sirloin yourself and slice it into chunks instead.
  • Other meat options include chunks of pot roast, thick sliced deli beef torn into chunks, leftover pieces of beef from a previous home meal, hamburgers cut into chunks, or mini meatballs sliced into pieces.
  • Keep the queso warm in your saucepot on the stove, until ready to serve it. Stir the queso if it becomes thick and add a small touch of warmed heavy cream if you need to thin it out a little bit.
  • Instead of frozen baked potato skins, you can make your own potato skins. Or use wedges of baked potato, thick-cut baked French fries, chunks of rustic toasted bread, thick-cut tortilla chips or toasted wedges of pita bread.
  • Craft you own signature queso flavors that accentuate the flavor of Merkts Sharp Cheddar Cheese. In place of steak and horseradish, mix in chunks of baked potato and broccoli, cooked spicy chorizo and peppers/onions, spinach and chunks of roasted chicken, or chili and corn chips.
